Would a HX750 power 2 normal edition 7970s both overclocked to 1GHz and a stock 3570K?

I think it would be fine. The best way to check is to go to a power calculator.

Yep, you'll be pulling less than 600W from the wall at load with that PSU. You'll have plenty of headroom for more fans, drives, water cooling and overclocking.
