Honey Mead question

I have just decanted my honey mead into another demijohn however while tasting it it doesn't taste very sweet. I used 3lb of unpasteurized honey and 4.5 litres of water. I am guessing it's around 7% alcohol rating through taste. Does anyone have any ideas as to why this has happened or will it gain flavour and sweetness as it matures.

Fermentation consumes sugar, so depending on how much sugar was there in the first place, honey mead could range from not very sweet to very sweet.

 

At least that's how I think it works based on common Skyrim Norwegian superstition.

 

Edit: My grandfather used to make it, and he used to add blackcurrant, smelled amazing.

You guys are all such nerds. I can't talk though I loved modding Skyrim more than playing it.

I believe you're supposed to add some sugar at the beginning of the process to preserve some sweetness because at the end there isn't going to be much left.

Only help I can provide is tasteing your results give it a nay or yay....or a hmmm.

Might require some bottles before my feedback can be accurate.
