I feel like a r9 290 maybe better for high res gaming, however judging by the fact that it isn't your current priority then maybe it'll do.

2. Should I keep the 970 or go for the 980?

Keep the 970. The 980 is not worth your money, unless going for 4k. And even then, it's still not enough. 1080p/1440p, the 970 will cover you. Just some notes:

 

Get the Asus Strix. It's so much cheaper.

Get this PSU, if you want to save as much money as you can. It'll handle SLI Strix no problem. It lacks modularity, but it saves so much money... use that to get rid of that 1080p display, and going straight to 1440p.

So after deciding to go with NIVIDIA, I present you my future first build. This build aims at 1080p gaming and I plan on OC too. I plan doing SLI and shoot for 1440p later down the road. Any thoughts on this build before my wallet crys?

The 750W version of the G2 psu is enough for SLI. The rest looks fine.

So a 750W will be enought for OC the CPU, GPU and SLI?

 

750 should be enough, although I'd look into wattage requirement for 2 overclocked 970's. I heard the 970 draws significantly more power when OC'd. It's hard for me to imagine why you'd want to OC two 970's in SLI, as they already provide more than enough horsepower even at 1440p.

EVGA GS 850W is the new Seasonic made unit. It is cheaper than the 750W G2.

The only 1440p G-Sync Monitor is the ROG swift (As far as I know) and it is hugely expensive at $748.99

No. If you want to speed up hdd access, you can allocate part of the ssd as an hdd cache using Intel Smart Repsonse Technology. But keep most of the ssd for boot and system.
