Do I need hyper threading?

If you're referring to a i7 or i5, no--you don't need HT

If you're referring to an i3 or G3258, then yes--you need HT.

It helps a lot for video editing/multitasking, but it's not needed.

for the average gamer, No. You don't need hyperthreading, it doesn't make much of a use in games which cant levy it really in any sort of way. 

 

However, if you're like me, and actively use crap tons of cpu cores with heavy multitasking, rendering, and game streaming then yes you might. That is the main reason i went with the 4790k over a 4690k.

If you do heavy or do something silly such as host Minecraft and play on the same machine, you're better off getting the i7. If you only edit every now and then, save the cash and go for an i5.

For your usage scenario imo, a nice i5 4690K will be more than enough. It's not to say that you won't render your videos faster with an i7, it's just that you obviously are going to do that occasionally and for the fun of it, therefore, I think the cost of an i7 is not justified.
