Don't they just run the games and get some averages.. And some games (I think the newest Tomb Raider) has a benchmark or something inside of the game..

Fraps benchmarking it benchmarks your min, max and avg with frame times.

 

Or press when you start and again after you finish. 1min is bit too little to get good comparison.

 

And OP, check some of Linus' videos where they explain tests.
