You can replace it, but it is a proprietary form factor. OWC sell replacement drives.

I wish you culd replace the HDD in the iMac for a custom SSD

 

You can, you can also change the CPU, GPU, and RAM. Just more effort. BTW, the iMac has the Apple PCIe SSD connector, and a standard SATA one for HDD.
