Upgrading Video Card

I'm looking to get some more GPU power, I'm currently running a single R9 270x.

Would it be best to add a second R9, or get rid of the one I have and go for something like a GTX 760?

I'm on a budget of around $300

add in another 270 or two
or maybe wait a bit and get a 285 or 280x  760 is a sidegrade from a 270x(especially witha decent OC)

The 760, as GloriousPain said, is a lateral move.  Either sell your 270x and put the proceeds with your 300 and get a 290...that will give you a new chipset and 4GB of VRAM on a wider bus.... or as your first option, grab another and go with crossfire.  There are some games that still have issues with a dual card setup but with new drivers rolling out, this could/will change.  General rule of thumb when upgrading, go up at least two tiers....happy gaming with whatever path you take :P
