Actually you can run above max supported memory, the i7 990x had a limit of 24GB of ram according to arc, people got running 48 GB of ram, I'm pretty sure linus made a video on this a few years ago.

My laptop CPU is only supposed to support 4GB Dimm's but it can use 8GB so I have 16GB. It was a "limitation" on sandy bridge laptops.
