So I plan to pick up a 780ti within the next couple of weeks and I plan to put an EK block on it. My first question is, what is the best 780ti card to get? reference? What model would you choose. Also, when I take off the default cover/cooling. and put on an after market cooler, will all warranty be voided? Thanks.

I would choose the EVGA 780 Ti with preinstalled Hydro Copper waterblock.

Thanks for the suggestion. The only problem I have with choosing that card is the fact that I would have to finish the loop completely before I can see if the card is a good overclocker or if it has any technical issues. Ya feel?

It is generally recommended to test everything outside of a case first and the card is binned compared to reference model ones.

Binned higher than other models? And you don't think it would be difficult to test a water loop outside of my case? I mean if it fails outside of the case it will still ruin my hardware.

You don't have to get the Hydrocopper at all. The EVGA 780ti Dual Classified w/ ACX is the air cooled version of the Hydrocopper. So you'll still have the performance of the Hydrocopper plus EK makes a sweet full cover waterblock for it. http://www.ekwb.com/shop/blocks/vga-blocks/fc-geforce/geforce-titan-series/ek-fc780-gtx-classy-nickel.html

If you want a waterblock that covers the whole PCB you could get the ASUS 780ti DCUII with this waterblock http://www.ekwb.com/shop/blocks/vga-blocks/fc-geforce/geforce-titan-series/ek-fc780-gtx-ti-dcii-nickel-original-csq.html

Both WB's also have acetal cover versions.

I would rather go with an EK block as oppose to the hydro copper. But this would still void the warranty correct?

I think that EVGA still let's you RMA cards within the warranty period if you put the stocker cooler back on it and if there is no physical damage to the PCB. You can contact their customer support about this question just to be sure.
