Hi! I'm planning to run several network cables into my under construction apartment.

I'll have 3 access points, 3 Poe cameras, 1 Synology Nas connected to probably a Unifi Switch and Dream Machine. I'm looking to buy HB Digital cat. 8 cables (i know it's overkill, but it's future proof and i'll not have to upgrade for some years), and they come in duplex or simplex.

Do i need a duplex or the simplex is just fine?

Simplex.

Admittedly, I've never seen duplex CAT cable before. There's probably an application for duplex cables, but for standard Ethernet, it's not any different than two individual cables.

any advice on anything i should do to have a correct installation?

No point going higher than CAT 6a, its highly unlikely the capabilities of these higher CAT cables will ever be used in the real world.  The power consumption to push 10Gbit down copper is already unreasonable high, why fibre is generally recommended for those speed.  I'm only using CAT 5e for most of mine, even the 10Gbit ones, as they are short runs under 10m.

Other than trying to avoid running parallel to mains cabling (if you have to cross mains cabling do it at a 90 degree angle if possible), there's not really much to worry about.

Router:  Intel N100 (pfSense) Backup: GL.iNet GL-X3000/ Spitz AX Switches: Netgear MS510TXUP, MS510TXPP, GS110EMX
WiFi6: Zyxel NWA210AX (1.7Gbit peak at 160Mhz) WiFi5: Ubiquiti NanoHD OpenWRT (~500Mbit at 80Mhz)

Don't waste your money with Cat8 cables, cat6a cables are perfectly good for 10gbps and higher. If you want options for upgrade, go with fiber, with the right fiber you can just change transceivers to switch between 10g, 25g,50g, 100g transfer speeds.

Duplex LC transceivers are cheaper, up to 25 gbps  (cheaper on eBay)

20$ 10g SFP+ Duplex LC https://www.fs.com/products/11552.html?now_cid=63

39$ 25g SFP28  Duplex LC https://www.fs.com/products/67991.html?now_cid=3215

269$ 50g SPF56 Duplex LC https://www.fs.com/products/146526.html?now_cid=2874

189$ 100g QSFP28 Dual LC https://www.fs.com/products/65219.html?now_cid=1159

Above 25g, MTP/MPO transceivers become cheaper, but there's few (if any) transceivers that use this fiber for 10g or 25g

39$ 40g QSFP MTP/MPO-12 : https://www.fs.com/products/36157.html?now_cid=1360

99$ 100g QSFP28 MTP/MPO-12 : https://www.fs.com/products/48354.html?now_cid=1159

QSFP28 is 4 x 25g connections, so you can split the 100g into 4 x 25g

LC duplex wall sockets are cheap...

ffs you just buy ready made cables with the connectors preinstalled, and just leave them hidden in the wall if you don't install wall sockets / plates ... it's not rocket science. you run them along the ethernet cable, through the same pipe etc etc

For example lc duplex ready made cable (select length) https://www.fs.com/products/40257.html?attribute=803&id=18486

and lc duplex keystone connectors (you can put in wall plates along with keystone ethernet jacks) : https://www.amazon.com/VANDESAIL-Coupler-Keystone-Modular-Multimode/dp/B0CZ8QJY15/

cat6a keystone connectors for wall plates / sockets : https://www.amazon.com/Cable-Matters-Shielded-Keystone-Integrated/dp/B0BT8GQ9DV/

or https://www.amazon.com/ZOERAX-Shielded-Keystone-Zinc-Alloy-Termination/dp/B0D3LHYSCG/

Honestly you probably dont need Fiber. Unless you want to do faster than 10 Gig or you have a long run (over 100m / 328 feet). Most of your devices will likely be Gig. Some higher end motherboards now have 2.5 Gig.

I just want to sit back and watch the world burn.

this is what i'll have in the house (for the switch i think i'll go for a Ubiquiti one + Dream Machine) and i can't see where to user fiber instead of ethernet cables

How big is this house and what are the walls made of? Three access points seems excessive if is not large and can actually hurt connection performance.
