Which one? GeForce 4070 TI or Radeon 7800 XT for the SAME PRICE

I know my components quite well, but I am not so sure about the graphics card.

The 4070Ti is the fastest card out of the two in pure performance.
Its also a lot faster in RayTracing if that is something you want.

 

I would get the 4070Ti.

 

Be aware that Gigabyte 4000 series GPU's have had issues with the PCB cracking near the PCIE slot so use the antisag bracket that comes with it if you can.

It shouldn't throw you off on buying a Gigabyte card, just keep it in mind.

Can't really think of many pros of 7800 XT over the 4070 Ti

I'll have an old i7 6700k for a while - that will likely bottleneck me quite hard, right? Gaming on 1080p to 1440p.

A tad of a performance blocker indeed the 6700K. But as a temporary CPU, can play most games decently.

Yes, the 6700k is going to be quite a significant bottleneck unfortunately, its 9 years old at this point.

You should still see a decent performance uplift with the new card but in CPU heavy games you will definitely not be getting the best out of the 4070Ti.

I actually went for an used Radeon 6900 XT (Sapphire Nitro OC) now. Seemed like a better value. I got it for 420$.
Already have my new Ryzen 7800x3d - so no bottlenecking anymore =)
