What should I buy to cool the 7900x?

The Thermalright Peerless Assassin 120 SE is more than plenty for the 7800X3D AND the 7900x 🙂 
Absolutely no issues.

If you only plan to game then the 7800X3D is the best CPU you can get right now.

No Problem 🙂  I run a NH-D15 at a constant 24% fanspeed on my overclocked 7700x and its well within safe temperatures even during heavy gaming.

The 7800X3D is only 20w more than a stock 7700x.  A  dual tower Peerless Assassin SE 120 will do the job very well for both 🙂 Even the 7900x.
