B550 Phantom Gaming 4 is OK with that 5600, but Phantom Gaming is Asrock's "cutting corners to make cheapest" series, so you're losing a lot of things just to save a couple dollars. You have very few USB connectors on the IO shield, you don't get usb 10g front panel header which could probably be useful as the nzxt h510 seems to have such connector in front panel... you get old onboard audio (ALC887), only 4 usb 3.0 and 2 usb 2.0, no usb type c in the back , no usb 10g in the back etc etc

It's also a board made with less layers, so it will probably be more picky about what ram sticks you use, and those cheap from less known brands are often made with less popular ram chips (like Hynix or nanya for example) which may not be supported

For example, better options would be

$90 ASRock B550M PG RIPTIDE : https://www.newegg.com/asrock-b550m-pg-riptide/p/N82E16813162065

Only if it must be cheap ... It's basically the Phantom Gaming 4 "refresh" so still weakish VRM (but perfectly fine with a 5600), but now it has  2.5g ethernet, has a couple usb 10g ports in the back besides the 4 usb 3.0 (5gbps) and 2 usb 2.0 and also has that usb 10g front panel header.

$110 MSI Pro B550M-VC WIFI  : https://pcpartpicker.com/product/tr4Ycf/msi-pro-b550m-vc-wifi-micro-atx-am4-motherboard-pro-b550m-vc-wifi

You get what the above gives you but a bit better VRM and a bit better memory compatibility and wireless.

Seems to be a new model, a variation of the classic B550M Pro-VDH WiFI - they updated the wifi to WiFi 6E and wasted pcb space with 3 pci-e x16 unde the video card pci-e x16 slot, those 3 pci-e x16 all have just one pci-e lane so nothing special.

You also chose some things that have mail-in rebates, $60 worth of those ... those can be hit and miss, and you may get a check months after you send the barcodes and all the information, so I wouldn't rely on those. I suspect the power supply has that discount, and I guess it's OK at $35 and 550w is fine for that system but you could probably get a decent psu at 50-60$ without rebates.

You went with that SN850 because it's pci-e 4.0, but you don't really need to spend extra just because it's pci-e 4.0 - you'd be better off going with a decent pci-e 3.0 and higher capacity

Some examples

If you want cheap, $65 Crucial P2  1 TB : https://pcpartpicker.com/product/KMkgXL/crucial-p2-1-tb-m2-2280-nvme-solid-state-drive-ct1000p2ssd8

It's QLC but reasonable drive, for light video editing will be OK.

80$ gets you decent TLC with high endurance and speed , WD SN570 1 TB : https://pcpartpicker.com/product/3dvdnQ/western-digital-blue-sn570-1-tb-m2-2280-nvme-solid-state-drive-wds100t3b0c

What do you think about the Gigabyte B550 GAMING X V2 ATX AM4 Motherboard

It's OK but not better than what I suggested above.  Looks to me like you're stuck on ATX but mATX motherboards are perfectly fine for your needs.

On the cheaper end, the only thing ATX motherboards add is just one or two extra pci-e slots, which are often nearly useless (and often they're disabled if you decide to add a second nvme m.2 SSD because the pci-e lanes for those slots are "shared" with that m.2 connector.

On this model and Aorus Elite, I don't like that they have DVI and HDMI on the IO shield - I'd rather have DIsplayPort - DVI is outdated, and it's not capable of more than 1920x1200 at 60 Hz (basically it's dvi single link), so no second 4K monitor for you if you use integrated graphics.

In your case you have separate video card so it's not important.

There's also no usb type-c on the back, and only 6 usb - 2 usb 2.0, 3 usb 3.0 5 gbps and only 1 usb 10gbps - the front panel connector is the 5gbps (usb 3.0 type-c) kind, not 10gbps.
