I have a i7-12700k I currently have a 2 fan aio. Should I instead get a 3 fan?

also what’s a good temperature reader program.

The ones I’ve been using have been showing that during gaming on average it’s between low 60s and high 70s but one of the cores could spike to 100 is this OK? some games like battlefield 2042 can make it be in between the 70s and 80s. but any games I play a couple of the cores always spike to 100 for a couple of seconds.

While not Gaming it’s mostly in the 30s.

Depends on the CPU. Some Intels are rated safe to 100C. The i7-12700K is also. Look in Package Specifications.

HWinfo is a good software for reading temperatures and all other sensors. Your temperatures are not that bad for a dual fan AIO. I don't think a three fan is going to change unless your AIO is a cheapo no name.

The problem with temperatures is that it's highly dependent on air flow within your case. I had mid 60's on the CPU during Rocket League, but I ended up adding several fans and directing air flow from the bottom of the case to the top (since my case has a solid front). It actually took me weeks to figure out how best to move air in my latest build. But with the same AIO, I dropped my CPU temps in the same game to 48 to 55 C. Which is a great improvement in my opinion.

You might need to post some more details and provide photos if you want better direction. Also, the solution to lowering temperatures might not be cheap.

I would try to keep it under 85, just to get it to not throttle. I would get  Arctic cooling Liquid Freezer II 280, 360 or 420. You can get it in a-rgb if that's your thing. Best aio on the market imo, no USB control, pump is synced with PWM fan speed and no lame software to control fan speed. Just use the motherboard or your favorite program.

Edit: I would try to keep it under 85 (In a gaming scenario)
