I highly recommend going with an intel 12700(k)(f) because the performance is just way better than the 5800x, and the B660 motherboards are finally on the market. (Or anything Intel 12th gen, if the i7 is to expensive)

If you aren't in a hurry and prefer AMD the upcoming ryzen 7 5800x3D might be an option, although you might be waiting half a year. 

Otherwise the build looks pretty good...
