Which RAID(s) am I going to choose if I have a small technology company comprising of 50 - 100 employees and why?

Before thinking about RAID, I'd advise establishing a backup solution first if you haven't already. 

 

RAID is useful for limiting downtime in case of hardware failure, but doesn't protect against much else for disaster recovery.

You're skipping a lot of steps here and leaving a lot of information to be desired but in small scale business the most common RAID levels you'll see are 1, 5, & 6.

 

Most small company's will opt for RAID1 or RAID5 depending on the number of disks but personally the little extra security RAID6 offers is worth the performance penalty. It's really dependent on how important it is that the server remain online and operating.

choosing which raid to use is one of the last steps to think about and depends on a lot of factors so nobody can give you a good answer without many more details.
