What should my next upgrade be?

Games, programs or workloads that it will be used for: Fusion360, FH5, Apex Legend, Spintires(Original), obv occasional YT.

Other details: I play at 1080p with a 75 refresh rate. Would like second monitor but not crazy about it.

If it was me, id buy another stick of ram then start looking for a nice 144hz monitor.

Get another stick of the same RAM. You may want to consider a better cpu cooler though too.
