HDMI or Display Port?

The graphics card I am planning on getting has only one HDMI and two Display Ports. For dual monitors would I hook them up? Would I use one HDMI and one display port or use both display ports?

You could do either.  Both are great for monitors.

will depend more on the monitor.  Some monitors treat different interfaces differently, so the performance may change.

 

IE:  A 240hz screen may only support that on DP, or only on HDMI

I second this. My g sync monitor only supports g sync over display port. Will take depend on the monitors.
