is anyone bother by iOS devices pumping out constant app updates? Why is this the case?

Which apps in particular are you talking about? Apps supplied by Apple or third-party apps?  How many updates there are would depend on the number of bug fixes and feature updates the app's developers are pushing out.

I'd rather have frequent updates as opposed to apps basically becoming unsupported. ¯\_(ツ)_/¯

No, they just happen in the background and I don't even notice. The developers fix bugs, add features, change things...
