Gigabyte > AOC, but these are totally different form factors. Do you want ultrawide or regular widescreen?

I would go with the gigabyte one just because it is an IPS panel. The AOC one is VA Panel.

Is there a big difference between VA and IPS just for gaming. At the moment i have TN 1080p 75Hz.

For gaming, not a huge difference. IPS panel do offer better color accuracy if you want a better experience watching films or doing creative work.

Going from a TN to a VA is probably going to be noticeable for you. VA has better color and deeper blacks, but more ghosting. IPS is kind of the middle. Better color and viewing angles than TN, but slower response time. Quicker response time than VA and sometimes even better color, but less contrast.

FPS gamers are going to prefer IPS. Gamers that just care about looks are going to want VA.

I'd encourage to you try to test drive in a retail store. Ultrawide is a very different experience, and people tend to either love it or hate it. In games, you can get a wider FOV and it feels more cinematic, especially on the curved panels, but it's a lot harder to drive (that 34" has 1.5x the pixels of the 27", so your card has to work that much harder). Ultrawides are great for productivity, In general, because of the extra real estate, but they suck for screen sharing when video conferencing for remote work. That also applies to streaming if that's something you care about.
