Today we are able to put 2tb of ram in a computer and which is the size of most ssds and hdds. Which has me wondering could we use ram as the storage. Ram is supposed to be a very low latency extremely fast memory so why can't we use it as extremely fast boot-drives and game-drives?

You absoluteny can and it was possible for a very long time.

The problem is that once you lose power or restart the PC everything on RAM will be gone because it's a non-persistent storage.

Ramdisks have been a thing for a long time now.

 

dram is volitale, so you lose data on power loss, not optimal.

 

Also the system that hold 2tb of ram aren't normal desktops, and are much more expensive that most users can afford.

If you want very low latency storage, get a honey badger from liqid.
