Would an rtx 3070 support 2 1440p 165 hz monitors? And still be able to ray trace. If not would a 1080p 60hz monitor work?

If you're just looking for the 2nd monitor just have stuff on it while you game on the other it will have zero (or nearly absolute zero) performance penalty. I have 1 1440p 144Hz monitor and 2 1440p 60Hz monitors that are all 27 inch on my desk right now. There is no performance impact at all and currently I am running a GTX 1080 so its a fair bit slower than a 3070, but no issues at all.

The only time that you might run into problems is when you have limited VRAM either from a card with not a lot VRAM to begin with or your taking one out of LTT's page and running 16 4k monitors.

I’m looking at getting a second monitor. It doesn’t need to be much, it’s just so I can be on discord or YouTube etc. whilst gaming. My main is 165 hz 2K. Would it need to be the same specs? Or could I get a cheap HD one? Also is it better to get a wall mounted monitor stand or desk mounted?

You can mix and match

Stand depends on your preference

Do you care about panel type?

Its nice to have all your monitors the same size and resolution but it honestly doesn't matter. You can have a hodgepodge of displays and it will work just fine regardless of resolution and size.
