Considering nothing is in stock it's a simple wait. Can't any amd cpu or any of the new gpu's which basically means you can't yet build your system.

nothing is in stock?  Amazon FR has everything, also o tweakers.nl you can find many stores shipping immediately

The ones at normal prices are either not in stock. I mean currently the 3080's sell for 200€ more. The 5600x the cpu I would recommend is either on preorder or not available anywhere. If you order now the shippingtime is weeks. That is something amazon doesn't tell you it says in stock nov 27 which means everyone that has ordered one is in a list right now and well you won't get one at the predicted delivery time trust me on that stock finally ran out last week and the stores cannot order in enough to meet demand.

So basically wait or else you'll either get a system that doesn't meet your needs, get a outdated system or end up far over budget for what should normally fit inside your budget.

That I can totally do. I will use pcpartpicker just to have them be in a nice list but it has a very limited reach in belgium for stores so basically use tweakers to get the best prices..

Might wanna add 2 arctic p series fans for some added airflow to it. Board is expensive but the cheapest board I could find with thunderbolt 3.

Cpu and gpu not in stock. Cpu should be 300€ gpu 700€ so don't overpay.

I just added a regular ssd as well none of your usecases will benefit from having a fast ssd and that would just be throwing away money. If you really want a faster drive because you want bigger numbers get a sx8200.

I see this warning in your list:

  •  Warning! Some AMD B550 chipset motherboards may need a BIOS update prior to using Vermeer CPUs. Upgrading the BIOS may require a different CPU that is supported by older BIOS revisions.

But I dont really understand it

Yes you need to update the bios of the board before the cpu will work. Which is not hard to do as and this board can update it's bios without the cpu just follow the instructions on the website. May or may not have an updated bios already by the time you get it.
