You would need a good quality 650W or more PSU.

Not sure what you mean by "Do I REALLY  need a high wattage PSU?", you need a PSU fit for the job.

Right now, you don't need more than 550-650W. When the new GPUs release, word is you'll need 850W, but considering you're getting a 1080ti today, probably not a big issue.

Use this calculator to see what size you need : https://outervision.com/power-supply-calculator

Choose a PSU of that wattage or higher from Tier A or B from this list

CPU - Intel Core i5 10600K @ 5GHz @ 1.35v + EK Custom Loop (Evo Supremacy Block, 240mm Copper Radiator, Res/Pump Combo, Mayhem Soft Tubing and Fluid) - GPU - Gigabyte G1 GeForce GTX 1070 - RAM - 16GB Corsair Vengeance RGB @ 3200MHz - Mobo - Asus Z490-A Prime - SSD - Samsung 850 120GB - HDD - 2TB WD Black - PSU - EVGA G2 650W Gold - Case - Corsair 680X RGB White with 6 x Corsair LL120 Fans.

Okay, thanks for the info, I'm planning to OC because I'm a 3D modeler and I need good speed, and I don't want Blender to crash (maybe I shouldn't set the settings too high Cough COUGH)

A good 550W will be plenty, like an RM550x or Straight Power 11 550W. Avoid the older Seasonic Focus FX and FM which had issues with high transient GPUs like the 1080Ti.

A good 650W to 750W PSU like the Corsair RMX would be a good place to start looking. Very solid stable PSU, high quality unit.

And it will last you for awhile, 10 year warranty.

If you are planning on upgrading to one of the newer GPU's like an RTX 2080 or better than I would recommend the 750W. That should give you some room for future upgrades down the road and you are overclocking so.....

Wouldn't go crazy with a 1,000W PSU or something, no need for those....
