You install desktop lite instead of server?

If you mean a regular desktop-environment, you can do e.g. "sudo apt -y install ubuntu-desktop".

I really can't think of any server applications that have a graphical application. Some have web interfaces, but that's the most I have seen.

You will spend more time in the terminal than the desktop.

Just use openssh for accessing the shell and sftp for browsing files remotely.

Yes, and I just told you how to install a desktop-environment. If you mean you want some sort of a GUI for managing services and the likes, then you're shit out of luck: there are tens of thousands of services one can install, there is literally no way of making a GUI for configuring them all. The closest you'll get is Webmin, but that'll still leave most stuff for you to configure from the CLI.

To clarify, the only real difference between the server & desktop versions is the missing UI (that and they have different apps preinstalled) so you can just install Ubuntu Desktop and run it on a server if that's what you need,

 

If you're planning to do server things on it you're going to need to get used to terminal because server stuff is designed to be configured and run via CLI.

You just install whatever GUI you prefer with just an APT command, as desktop environment is just a normal package

 

sudo apt install ubuntu-desktop

sudo apt install kubuntu-desktop

sudo apt install xubuntu-desktop

 

(not all the three at the same time, of course :) )

 

Of course, as on any server, you'll probably need to set up a lot of stuff via terminal, but that's equally true on Windows Server as well.

There is no such thing as "Ubuntu Server" or Ubuntu Desktop" as such as they are different things. They are actually the same thing, but with different default packages installed to suit the specified role. It is just a name used to quickly preselect a number of packages to be installed.

 

In the olden days, you had to go through the entire list of packages manually and select/deselect the packages you wanted to install. This was tedious, annoying and often you had to go back and fix things as you forgot something and package management wasn't exactly at the usability it is today.

 

So to surmise, there is only one Ubuntu and it can be whatever you want. It can be a server, it can be a client, it can be a gaming pc. Or in your case, it can be a server with a desktop GUI. It's Linux. It's your choice. And whatever your choice is to install, it is right because you chose it to be.

Op, as several have said here, there is no meaningful difference between ubuntu server and ubuntu desktop.  Ubuntu server is just the desktop with all the superfluous apps and the gui stripped out.  You either need to install ubuntu desktop and uninstall all the unnecessary software, or install ubuntu server and install the gui.  That really is all there is to it.

This is correct, these are your best options. Personally, I would start with Ubuntu desktop and then add the server stuff needed because that’s easier (in my opinion) that starting with Ubuntu Server and adding the GUI.
