i know i could do that but

1. would rather have each OS isolated in case one drive gets corrupted

2. honestly i just wanna see if a laptop like what i described exists

Well almost any laptop works in that case most laptops have an M.2 ssd and an HDD

kinda want a laptop that has two drives (or can have a second drive installed) for two OSes. not really practical or necessary; just think it'd be cool. I know I could probably put 2 OSes on one drive but ehhhh...

all it needs to do is be able to boot from both drives, play 1080p videos at 60hz without exploding and maybe play a game like scrap mechanic on lowest at more than 15fps.

heck.

I would get a laptop with a 1TB ssd instead and dual boot on that

Reminder⚠️

I'm just speaking from experience so what I say may not work 100%

Well you can get laptops with M.2 slots  witch can used as a second drive or a nice upgrade down the line.

But that's just a "configuration".

There are many Notebooks, that come with only 1 M.2 SSD, but still have a 2,5" Slot empty, which you can just put an Sata SSD / HDD into.

Most 15" models have that, but look for a teardown to make sure. 14" and smaller don't always have that, but some can.
