It depends on what you would like to edit. 

 

As far as gaming goes, it also depends on what you want to game at. By heavier gaming, do you mean 4k at ultra? or are you talking 1440p at ultra?

 

If you could provide a little more info about what you would like to do that would really help myself and others to give you some help!

the 3700x is pretty good cpu for those workloads, you can go for it. but if your budget allows, get the 3900x for the best performance. btw, what GPU do you use?

If you can find a Ryzen 7 3800X for around the same price as the Ryzen 7 3700X, then I would go with the 3800X since it comes with a better stock cooler included, has higher potential for overclocking and comes with a higher clock than the 3700X speed out of the box even if you don't want to OC, will even automatically give itself a slight boost if the conditions are right (sufficient power, cooling, etc).

Well in that case you'd be fine with a R5 3600x with a decent GPU like an RTX 2070. Editing however might need some more horsepower, but again it depends on what it is you want to edit.

With a better CPU cooler included and the TDP bumped to 105 from 65 as on the 3700X, more than likely you will be able to overclock a given 3800X beyond what you could overclock a 3700X to.

If you can find a 3800X for near the cost of the 3700X it still doesn't make much sense to still get the 3700X, even if you have an aftermarket cooler, the 3800X is a better binned version of the 3700X and that still means that it will likely be able to outperform a 3700X at stock and while under stable overclocking.

As I have stated in my previous post, a 3800X is a better binned 3700X and that means that most likely it can be overclocked further, also has a higher frequency out of the box that automatically boosts up slightly higher given right temperature and power delivery conditions (AMD Ryzen AutoOC). Go with the 3700X if the price difference is significantly higher for the 3800X, although if the cost isn't that different then go with the 3800X.

 

A Ryzen 9 3900X would help with video editing projects (not so much with gaming) if it would work within you budget, just make sure that you have a sufficient amount of RAM depending on the size of video editing projects and what video editing program/s you use (for light video editing 16GB should be enough, although you may benefit with 32GB, 64GB, or more RAM).

I have 32 gigs of ram and would probably be editing hd maybe some 4K. But the r9 is definitely out of price range, and I feel would be overkill for my system. Right now I have a rx 580 but will upgrade that too, just waiting to see what new cards come out and if the old ones dip in price. I’ll look for a good deal on the 3800x but read that it’s not too much better performance than the 3700x.
