Did you play with the fan curve ? Maybe you could try to change it and find something suitable for you.  This is my fan curve.

at full load ?!? ... seems low but you must have a really well ventilated case then ... When I play it usually goes between 68 to 75 depending of the game with the fan curve I've shown that's why I find it quite surprising.

games dont have to do with fan curve

but i know minecraft can be finiky about drivers

not at all bottle necking would indicate bad frame time

I would monitor temps with adrenalin, afterburner or hw info ... this looks like a cam screenshot and I'm not sure how reliable cam is for gpu monitoring

It doesn't show the temperature there.

Anyway you could just make a fan curve to plateau at the max fan rpm desired so it won't ramp up in rpm but you might get higher temperature than before.

could it also mean that one of the fans is stuck? cuz i hear some kind of clicking noises when it is about to start spinning

Also wouldn't hurt to do a few malware scans with different tools, if downloaded weird minecraft addons. I do not know how easy it is for malware to mine or run code on your gpu, but it will just cost time.

Have not thought about that lol
