If people stopped mining then the coins currently in circulation could still be moved around. There just wouldn't be more coins added.

Thats what I tought. Because miners also process transactions (and verify them) right?

People will not stop mining when you can still make profit. After the 21m btc cap, people can still earn the fees from mining. Someone will continue to mine.
