So I was watching the ltt "cleanest setup" video and I really liked the idea of using a laptop on the go and as a desktop, however the Downside of a laptop is that you cannot upgrade the CPU. I was wondering if there are any laptops in which I can upgrade the CPU later down the line.

There are some that use desktop cpus, but there are all thick and heavy, so if you want a portable laptop, you can't change the cpu. But also even if its socketed, they normally have near the top of the line cpu, and with intel atleast changing sockets every other generation, there isn't much room to upgrade anyways.

Some Clevo laptops (sold in the US as rebrands) use a desktop socket, but it comes at a price. They're bulkier, they're heavier, they run hotter, and their battery life is severely hampered. If something comes along like the old Eluktronics 15.6" model that came at a very reasonable price with a G4560 in it, they can be very upgradeable, but in general imo it's not worth it. If long term support is your thing, you'd be better off with a 15" ThinkPad, Precision, even a MacBook Pro.

I enjoy buying junk and sinking more money than it's worth into it to make it less junk.
