Do I need to remove this?

I’m replacing my old liquid cooler with the Corsair H100i RGB Platinum SE and I’ve never done this before.

 

Do I need to remove that gray thing on the back of the motherboard to install the new backplate?  Is that the old backplate?  I’m not sure how to remove it without just ripping it off, which seems like an unwise thing to do.

Those look like little sliding things.  Are they?  And unless you can screw your new AIO into that plate then you're gonna have to remove it.

Yes you must remove it and use the included backplate. Unhook your current cooler and that should pop off. Whatever is holding it on will be on the other side of the motherboard.

The gray thing is the existing backplate.

If you have removed your existing cooler, the backplate should come off pretty easy, might even fall off.
