This sounds like a bad unit, wattage wise is enough but quality wise it's very questionable.

yes and no. You could run that with a 600 watt power supply. But i wouldn't recommend using it with that power supply because that's not a very good unit.

Can you post a link to your power supply, these guys are saying it's bad but I'm fairly certain an EVGA 80+ certified power supply is perfectly fine

What are you guys basing this opinion on?

EVGA uses Seasonic, Superflower, HEC and other reputable OEMs for their units. I'd hardly call said OEMs "very questionable" or "not very good".

MacBook Pro 16 i9-9980HK - Radeon Pro 5500m 8GB - 32GB DDR4 - 2TB NVME

iPhone 12 Mini / Sony WH-1000XM4 / Bose Companion 20

This is what i was thinking.  Only the 2 absolute "worst" EVGA PSU lines (the N1 & W1 series) are either not rated (N1) or white rated (W1).  Aside from those 2, The B1 and up are all at least 80+bronze.  Not much EVGA puts its hands on can be called bad IMO.  Am I saying the lower level ones like B series are great and I would personally use them? No I probably wouldn't.  But I wouldn't say they are bad, they are simply not "enthusiast grade."  Worst case scenario, it won't get off your mind and you "have" to replace it, you can pick up something like a Corsair cx650m for like 70 USD, and that is a quality entry unit to put your mind at ease.
