So I am in the market for a Video card to drop in my R7 2700 build that is currently using an AMD fire v5900 lol.....   I have it on a Gigabyte Aorous MB and the Aorous 2060 super looks visually like it would be awesome looking in my build, but am I doing the performance that much of a disservice if I choose to use that card vs like the nitro + or Red Devil 5700 XT???

Well the 5700XT is a bit better than the 2070S for less so it's your choice in the end :)  If you are only gaming go AMD, if you also do video editing, adobe etc, you should consider Nvidia.

Performance wise, yeah. MSI Gaming X and the Sapphire Nitro+ are excellent options too for that GPU.

Though if you really like the looks of the Gigabyte 2060 Super, it's not a bad card. Has an improved NVENC encoder over Pascal/16 series Turing (and fucking lightyears ahead of AMD's options), and supports RTX stuff if you wanna run that in the games that support it.

You can argue the 5700XT is the better value for gaming specific but not straight out claim it's just better, these are all recent games... older DX11 games will further RTX's advantage.

What about 1k and 2k ? I think it's from and Hardware Unboxed video but which one ?

The differences get progressively more the lower the resolution. (with a few exceptions) Unless you overclock the 5700 XT, it's not quite on-par with the 2070 Super. It does blow away the 2060 Super and 2070 though.
