How much money are you looking to spend?
What are you hoping to use it for? Just uni work or other stuff as well?

GTX 1060 and 16GB of DDR4 is a good place to start. You could probably keep those. The i3 6100 is a little underpowered though. You could look at getting a new motherboard and a Ryzen 3600 CPU.

CPU: Intel i7 6700k  | Motherboard: Gigabyte Z170x Gaming 5 | RAM: 2x16GB 3000MHz Corsair Vengeance LPX | GPU: Gigabyte Aorus GTX 1080ti | PSU: Corsair RM750x (2018) | Case: BeQuiet SilentBase 800 | Cooler: Arctic Freezer 34 eSports | SSD: Samsung 970 Evo 500GB + Samsung 840 500GB + Crucial MX500 2TB | Monitor: Acer Predator XB271HU + Samsung BX2450

With that i was looking at upgrading to an i7 than eventually upgrading my gpu when i can

For the cost of an i7 6700k or 7700k you could probably buy the Ryzen 3600. Used prices for i7 CPUs are wayyyy too high.
A brand new Ryzen 2600 + B450 motherboard should be less than the cost of a 2nd hand i7 6700k on eBay.

True, however in the past i've had bad experiences with AMD CPUS

That's not a reason to get a much slower and more expensive i7 that is already obsolete - Ryzen 3000 is by far the best product on the market atm.

If it's ddr4 memory i can already supply that, that goes with the case and the power-supply too. I only really want to upgrade the CPU, GPU and mobo

Don't worry - they just don't read anything and spam builds from American stores. Sadly how things tend to happen.

Cheers

you can reuse your Ram and case (if it fits atx boards)

What speed is your ram rated at? Ryzen prefers >3200mhz
