I think you should be fine with the 1660Ti (not sure though).

Prolly any card that can support the bandwidth. 660ti is pretty cheap. Maybe even 550 or so. 

 

Do you have an FPS and settings goal? Something that will actually determine a card?

144fps at 1440p at the high settings preset

At least a 2060 super.

I had a GTX1080 which has neck and neck performance to a 2060S as well as the same monitor specs as you. While on medium settings, I got a pretty constant 120+FPS but I would still recommend a 2070 or more

Nvidia gpu's are better in fortnite than amd gpu's.

The 2060 Super has 2070 level performance it should be able to run Fortnite at 1440p over 120fps paired with a decent CPU.

my RTX 2070 does 144 fps on fortnite occationally dipping into the 110's but ususally maxing out the monitor at 144hz. I imagine a 2060 super as it is almost as fast as a 2070 would do the job. a 5700 xt would also do it.  a 2600 will probably be sufficient to push it, it is very low impact on your cpu.

The Ryzen 5 2600 should be fine paired with the 2060 Super, if you want the best performance out of it just make sure to do at least 3000mhz ram. Ryzen 2000 CPUs like high speed memory.
