Look up GMMK, many size and switch options, great value for the price. https://www.pcgamingrace.com/products/gmmk-full-customized?variant=33499457614

If you don't care about rgb nonsense look into Leopold keyboards, no RGB, but the quality is superb and you can get them for under 150 USD. https://mechanicalkeyboards.com/shop/index.php?l=product_list&c=169

I think Coolermaster makes good value keyboard, especially since you can get RGB or no backlight. TKL and full size and can even choose not to get Cherry MX to safe yourself some money and still get a mechanical board.

But it really depends what you need/value.

I guess the best value keyboard is the cheapest thing you can get with all functioning keys.

Leopold Fc750r. It has the best caps you can get on a prebuilt (Cherry Profile Pure PBT Doubleshot caps) and are pretty cheap at around 110$. But it doesn't have many features and gimmicks as other boards around it's price range, but it makes up with it's excellent build quality.
