what are you using the server for? 

They host HyperV clients for multiple things.

Host a metric ton of HyperV clients. Why else would it require 128 GB of RAM?

How many do you run? Can't be many with your specs. Hyper-V requires minimum of 512 MB of RAM per client. Recommended 1-2 GB. And that's without getting into vCore to real core/thread ratios. Also it is not generally recommended to use a K series CPU for Hyper-V as they don't have VT-d, vPro support etc which Hyper-V benefits from. So I'm not sure if you are bluffing, embellishing or just flat out bsing

Sweet gig man! Keep up the good work! Do you run a business that does this kind of custom servers? If so, any tips on a newbie looking to get into that kind of work?

It's only one of the many hats I wear at work. As far as getting into it, I kinda just fell into the position to be honest. You have to be very familiar with Hyper-V, Server 2008, 2012 etc.
