SSD lifespan is a thing of the past. Just buy from a good brand (Samsung or Intel) and use it the way you want. You won't even come close to hurting an SSD using it the way you want. For example, my 840 PRO has over 12TB of writes and is still 100% healthy. So don't worry :)

 

Also, unless you have a lot of media, I'd just buy one big SSD. But have you considered an HDD for your content storage?

Ha 12 TB ;) Cute Ive had a few Samsung SSD's go over 30-60 TB Written/read so far per year for a few years now, and tests have been done to show they go well beyond the 350TB+ Mark

Exactly. They can be pelted with a fuckload and still be fine.

Is your media server going to be in the living room where noise is a concern? If so, SSDs might be a good option due to silent operation.

 

Otherwise, for storing media HDDs are far more cost effective. High volume storage, much cheaper. A movie isn't going to benefit from a faster SSD. 

 

The same with any storage medium - any drive can fail at any time unexpectedly. Back up any data you aren't prepared to lose.

I've seen torture tests where Samsung 850 Pro has gone past 1PB (1 petabyte) mark. That's over 1000TB of writes. It's rather insane. I'm not saving mine at all and I've used up around 35TB of writes in around 3 years or so. The SATA3 will go extinct entirely way before I'll ever hit that mark.

That famous endurance test used the Samsung 840 Pro (not 850) and it hung on to around 2.5PM before saying uncle. The 850 EVOs are better than the old 840 Pros and the 860's (Pro and EVO) are even better. SATA has plateaued for speed so the only possible improvements left for SATA III SSDs is greater endurance and lower cost, neither of which is to be sneezed at.

 

SATA is far from dead and won't be in my lifetime (granted, I'm ancient). HDDs haven't even started to take full of SATA's top speed so they have all kinds of room to grow there. They are still increasing in capacity (and the end isn't in sight yet) and prices have been creeping down. Despite the amount SSD prices have been dropping, HDDs are still, by far, the most cost effective storage medium so there will be a place for SATA for a long, long time.

Keep in mind that TBWs (TerraByte Writes) aren't the only thing that determine an SSDs lifespan. For example, the controllers are not all created equal (and more SSD deaths are due to faulty controllers than from exhausted TBWs). SSD manufacturers use a variety of controllers, some better than others. The early Sandforce controllers were notrious for crapping out early.
