I was too afraid to do that with my harware RAID1 config, at least run consistency check on the data using Intel RST before that so as to make sure all the data is safely on both drives.

Just wipe one of the drives and reformat it so it's separate. Since it's RAID 1, the data will still be on the remaining drive.

Make a backup elsewhere and break the drives.

If you have a second computer, take one of the drives and plug it into the other one. Then each computer will read the drives as separate.
