How to make a custom midi profile

So for my Band class, my instructor is wanting me to use this program called sound trap and basically play around with it. The first assignment is to take a midi track of the star wars theme, and basically edit it. I want to replace every instrument with the sound of a screening goat. To do this, I think I have to make a custom midi profile where every sound is the audio of the screaming goats (with auto tune for the pitches), and then play it through the goat sounds. But I have no Idea how to make a custom midi sound profile, or load it. How would I go do this.
