I'd probably just go for any in the 175$-250$ range

Ryzen 5 1500X (2.8GHz@0.8875V) === ASRock B450 Gaming ITX/AC === 24GB DDR4 === Sapphire RX 570 4GB === Optane 800P 58GB === Patriot Burst 240GB === Toshiba Q300 240GB === beQuiet SFX Power 2 400W === Silverstone ML08B

Spoiler

OK, i'm not even gonna build this, but is this a good workstation?

Go for that one then. I don't know much about X570, but all of them should be enough for atleast a 3800X.

Why would you spend that much on a motherboard if you dont even plan to overclock and just do basic stuff.

Save or use the money saved to get a better CPU, a 169$ X570 Phantom Gaming 4 is more than enough.
