All depends on what you are playing at, 1080p with max setting and the 3gb will be perfectly fine. If you are wanting 1440p then go with the 6gb. Another option would be to try and find a GTX 970

That's waaaaay too hot brotha. Only three reasons I can think of that would cause your GPU to get that hot. You either have the overclock too high, you have terrible airflow in your case, or the GPU's cooling system isn't working properly. What temp is the GPU at idle?
What is your current case-fan configuration? Tell us how many fans and their locations. Preferably, you want a couple fans in the front pulling cool air in and a fan('s) in the back pulling hot air out.
It's a fact that blower style GPU's inherently run hotter. They are best used in small form factor cases. On the brightside, the blower style is perfect for modding with a NZXT G12. I put the G12 on my ASUS GTX 1080 Turbo and now the temps never go above 50C.
