Monitor setup opinions needed

I am looking for a screen/screens for a new pc and I have a budget of £500-£600. I am unsure as to which option to go for and would be grateful of opinions. The new pc will be largely for working on documents with some videos/movies etc as well, looking to upgrade in the future to allow for gaming.

 

The options, as I see them, are as follows:

1) 2 x 23 inch 1080p LG IPS monitors = ~£240

2) 3 x 23inch 1080p LG IPS monitors = ~£360

3) 2 x 25inch 21:9 1080p LG IPS monitors = ~£400

4) 2 x 29inch 21:9 1080p LG IPS monitors = ~£520

5) 1 x ASUS PB278q IPS monitor = ~£440

6) 1 x ASUS PB287q 4k monitor = ~£570

 

There is also the 40inch Seiki 4k VA monitor coming out in Q1 2015, would it be worth waiting for as text on the PB287q is likely very small?

 

[super strech goal is the 34um95, but it is super expensive so I'd have to sell my soul...]

I would get the AOC Q2963PM, or if you can afford it, two of them.

I don't really like 3 monitor setups personally. I would probably go for something like the PB278q and maybe a cheap 1080p monitor at the side to help productivity.
