so the camera app (default) i have on my phone if i press record i cannot pause the recording.. i have to actually stop it, save it, then start a new one but that brings up the problem of editing them all together.. is there some kind of app that will let me pause the recording without stopping it?

My Samsung phone does have this feature. When you hit record, two buttons appear. The stop button, and the pause button. The pause button lets you keep multiple sections all a part of the same recording, but I don’t know of any camera apps that have this function.
