What's your budget?

 

I'd say go for a 1070ti 

AMD Ryzen 3950x under a Noctua D15S, 32 Gb G Skill FlareX 3200 DDR4 running at 3200 CL14, Gigabyte Aorus Pro 570 Wifi, Gigabyte 2070 Super hooked to a Dell U2718Q 4k HDR monitor & an Acer 1440p 144hz IPS panel of some kind, an Inland 1 TB M.2 PCIE 4 main drive, a Samsung NVME M.2 250Gb, WD Blue 500Gb  and 1 TB SSDs, Corsair RMX750, Rainbows and butterflies...

depends on what graphic  settings you're playing at.
A 1070 wouldn't be too bad for high settings with maybe a few at medium as a worst-case scenario

With a 1080 they should all run at ultra without a hitch except for maybe the most demanding ones. My 1080ti does every title i have thrown at it at max settings 1440p atr 120hz

AFAIK Minecraft is pretty much CPU bound so your GPU won't really matter that much. So an RTX 2080 would absolutely stomp that because it's equivalent to a 1080 Ti, which crushes most games even at 4K.

Defo a 1070 Ti/1080 like everyone else said, unless you wanna max all the things and you play beefy games like Rise of The Tomb Raider, then get a 1080 Ti if you can afford it. (At max settings it looks damn good but a 1080 will get drops to 54fps in some parts on 1080p, 1440p would be even harder to run).

Rise of The Tomb Raider. I don't have Shadow of The Tomb Raider but apparently it's easier to run than it's 2015 predecessor. ROTTR still murders a 1080 if you max the settings at 1080p, at a higher res it's an even tougher game to run. Still looks better than most of the 2017/2018 games I've seen too. 

 

EDIT: Or Crysis 3, that's still damn hard to run at max settings.

If you only want 1440p60 you could easily get away with just a 1070 or even a 1060 6gb if you have a small budget. A 1060 would struggle a bit running games like Battlefield V at Ultra, but should definitely be able to run it at high settings. A 1070 is definitely the way to go for 1440p unless you want to be able to hit 200 fps.

You can run at 1440p with a potato graphics card if you turn down settings very low and are ok with sub 30 fps, or if you're playing something from ten years ago.

If you're aiming for high to very high quality settings in most triple A titles, and at least 60 fps, then the 1070 ti and beyond are king.

 

I'm assuming you want to play the latter; triple A titles and with decent quality settings, if so, a 1070 ti is your best bet and should be relatively affordable.  now after looking at Newegg.com, it seems that the 10 series prices are going up, so you might be able to snag a 2070 for a similar price or slightly more.
