Hey there is a video about using server hardware for gaming but I wanted to see how I could make it go so I looked for ex-servers on eBay and found a beauty

Dual quad-core Xeon at 2.33ghz

4 gigs of ECC ram

No HDD

No power supply

But I was wondering what GPU to use and where I could get the PSU for cheap

And would this even be worth it

You don't want a server, you want a workstation.

There's tons of used i7/xeon workstations out there for dirt cheap. With a xeon you will also generally get ECC support with that platform so that means you can grab ECC Unbuffered DDR3 for a few bucks each. Most workstations won't even need a better power supply after you scoop up those dirt cheap GTX 970's that are out there too to round out a few hundred bucks. Add one of those $30 120gb ssd's and it will do really well.

Get any used prebuilt from HP/Dell/Acer/Lenovo from eBay/criagslist/fb marketplace. Dont purchase small form factor PC's. They must have at least a 3rd/4th gen i5/i7 and 8 gb of ram. They usually go around fr $140-200. Try getting Acer one's, as they don't use proprietary connectors.

Purchase a 240gb SSD fr about $30-40. Purchase a used GPU, something like a gtx 770/780/960/970/980 fr about $80-120. Get a new 550w psu, something like cxm series from Corsair or masterwatt series from cooler master.

Assemble everything together, ND u'll have a decent gaming rig fr around $300-350.
