Ripping DVDs with Linux

I have an old Dell server that I have been working to try and set up as a plex server. I just recently got a couple movies ripped off of dvds using vlc but they came out with really bad quality. I looked into other options and there were lots of recommendations for handbrake so i thought that I would give it a shot. I downloaded the program through the Ubuntu store and ran the needed sudo commands to update/download any other needed tools or packages. I launched handbrake, selected the movie disk and then handbrake scans the disk and says that there is no movie on the disk, even though I know that there is. I have put way to much time into trying to figure this out on my own and was wondering if anyone had any ideas.

Also, as I understand it, VLC lets you pick settings for ripping movies and in your case it's just the default settings that look bad.
