Ryzen - 1st vs 2nd generation

1. Not much to miss out on. Can achieve somewhat higher clock speeds, marginally higher IPC, storeMI on b450 boards, and an RGB cooler.

1.- What's the big feature (that I may be missing) of the second generation of Ryzen over the first generation?

 

 

Second question:

- I plan on getting a 2k monitor with 60 Hz

- Not overclocking CPU

 

2.- Would I be fine with a First generation Ryzen 1600 / 1700? (at first I thought I needed a 2700x but I was wrong)

You forgot memory compatibility, which is significantly better on 2nd gen.
