Yeah, 1080ti or Vega 64 depending on the software.  If you're looking to do a mix of workloads though (some calculations, ai, rendering, gaming, etc), 1080ti is probably the safer choice.  Depends on what you value the most.

Isn't the Quadro 2000 a pretty old card?  I don't know how it compares to modern gaming cards when it comes to calculations but don't pay $400-$800 for one of those, I think that's like a $50 eBay card now.  I have a few Quadro 4000 I pulled from retired Dell workstations and I can only ever get $60 (Canadian) for them on a good day.

It really depends on what you're using the card for.  For deep learning the 1080 ti is the best price for the given performance right now.  Unless you must comply with the nvidia EULA, i.e. big company or university, use the 1080 ti and make sure you have it on a 16x rev 3 slot.  Newegg is selling the Gigabyte 1080 ti 11gb oc for about $650.  Don't forget to use Linus's affiliate link so we can keep getting spazy tech entertainment.
