A lot of different things. The two you mentioned would. CAD definitely could. Compiling programs. Perhaps ray tracing. The list goes on and on.

stick with stock unless, your overclocking or you live in a very hot area like 30C+ with no AC.

Cooler is better unless you're taling about extreme OCing
